Miserable Day Stew

You know those awful days when you just don't feel good - you want to stay in bed - it's a miserable, cold, rainy, nasty day?  Here's a warm and comfortable meal that you can toss together and curl back up on the couch until it's ready.


Miserable Day Stew

Ingredients:
3 large potatoes, peeled and cubed
10 carrots, peeled and sliced
1 large white or yellow onion, rough dice (large chunks)
2 lbs stew meat (take a chuck roast and cut into 1 inch cubes)
2 bay leaves
2 bags frozen peas
2 cloves garlic, minced
1 can tomato soup
3/4 cup beef broth (or water)
Salt & pepper to taste

Directions:
Place carrots, potatoes and onion in bottom of slow cooker liner.

Place beef, bay leaves and peas on top of vegetables.

Stir together garlic, soup, broth, salt and pepper.  Pour over meat and vegetables.

Cover and cook 8 - 10 hours on LOW setting.

Alternative cooking method:
Preheat oven to 250°F.  Place everything into a covered roasting pan.  Bake for about 5 hours or until done.  This is also perfect to cook while you're at church.
